My First Fatty

Well, I finally took the plunge and made my first fatty.

Last night after I put a butt on the WSM, I sauteed some portabellos. I spread out some sage sausage and topped with garlic, chopped shallots, and the mushrooms. I sprinkled cheese on top. I rolled this up and stuck in the fridge overnight.

I slept through and overcooked the butt. Great bark, but I suspect I'll be eating this for lunch rather than putting it on the buffet tonight. Anyhow, after I pulled the butt off, I put the fatty on after I sprinkled it with some rub.

I went and doodled some. Two hours later, I pulled this off. My wife wanted to sleep in so I decided to just slice this up and have it for breakfast by itself.

This was excellent. I suspect fatties will be a regular on the menu from here on out.

I appreciate everyone who has written about fatties over the years. I've been reading your posts and felt comfortable making this.
 
sorry i wasnt more specific, i was wondering with it being sausage and all, and a wrap, how the sausage grease (in the middle) found its way outside the wrap or if this was even a problem, it doesnt look greasy at all i was just curious as to how it may cook differently than say a chicken breast wrap

My stab would be he's wondering if the oil from the cheese leaked out.

Having done a few fatties myself, I can say that i haven't had any issue with oil from cheese.... but moisture from uncooked (or undercooked) veggies can be catistrophic!!
 
I noticed no issue. I suspect it dripped down into the foil around the water pan. It was not greasy whatsoever. My wife even liked it!

Two hours . . . perhaps five minutes or so longer . . . at 225. I did not take an internal; I went by touch. Was going to go a bit longer, but since I had just overcooked the butt, decided to pull it off then so as not to really be in a pissy mood. Doing so provided some happiness to this big day.

I pulled the pork at lunch. It's a tad dry, but not really bad. I'll add a little more finishing sauce before putting it on the table tonight. My wife and I rationalized that it was still better than any BBQ our family has had.

RD, yep a finishing sauce will bring the dry butt back to life for you, no worries. Great looking fattie, well done.

Well, I slaved and worried about the turkey for days. It came out fine, but wasn't finished.

The pork, which I overcooked, was devoured. On top of that I added cayenne instead of pepper flakes to the finishing sauce. It spiced it up quite nicely, but sometimes people think my stuff is too spicy.

all I can say about Mr. Fatty is "wow" looks beautiful. Nice job. I gladly would have bought it had the opportunity! You need to save the pic for your archive.
