Well, I finally took the plunge and made my first fatty.
Last night after I put a butt on the WSM, I sauteed some portabellos. I spread out some sage sausage and topped with garlic, chopped shallots, and the mushrooms. I sprinkled cheese on top. I rolled this up and stuck in the fridge overnight.
I slept through and overcooked the butt. Great bark, but I suspect I'll be eating this for lunch rather than putting it on the buffet tonight. Anyhow, after I pulled the butt off, I put the fatty on after I sprinkled it with some rub.
I went and doodled some. Two hours later, I pulled this off. My wife wanted to sleep in so I decided to just slice this up and have it for breakfast by itself.
Awesome!
This was excellent. I suspect fatties will be a regular on the menu from here on out.
I appreciate everyone who has written about fatties over the years. I've been reading your posts and felt comfortable making this.
