My 1st Smoked Cheese

Well my 12" AMNTS arrived a couple weeks ago and i finally found some time to try her out.

Loaded with apple pellets

Gettin going

Gouda and cheddar were the cheeses of choice

Onto the WSM

1.5hr's later

Vacuumed sealed and back into the fridge to mellow out.

Question for those that smoke cheese - How long do you let it sit before eating?

Great looking cheese Stefan! When I smoke cheese I usually let them mellow for about 2 weeks or more.

Just as described...light it up and let it burn, just like lighting incense.

They didn't have the 6" version when i ordered mine and would have probably gone that route. Can just fill up the 12" version less for shorter smokes.
