Multiple beer can chicken advice

My wife is 9 months pregnant with twins (our first) and about to pop any second. In prepartion for the arrival I have been cooking and freezing some meals to make our lives easier.

This weekend I had planned to make some chicken casseroles and thought it would be easier to get 3 whole chickens and cook them so we got a lot of chicken for many casseroles.

I am thinking I can get all 3 on the WSM and cook at high heat (I usually try to cook beer can chickens at 350 on the gasser)

So for the experts out there, should I just do all lit coals and an empty water pan? 3 beer can chickens will fit on the wsm right?

I will also add that the wife has requested no smoke wood as it doesn't sound good to her right now (and I have learned not to argue with a pregnant lady)

Larry, do you know what size those chicken are? I was thinking about having a chicken cookout for some friends this weekend.

That cook was last summer, as I recall. I don't remember the size, but I seldom buy small chickens. They were pretty large - "roasters" and not fryers.
Here's another photo to give you an idea. The platter is 10" x 15".

Again, it has been awhile since that particular cook, so I don't remember exactly. You'll notice the brown wires which come from my Stoker - I probably had it set for around 300 degrees, with the temperature probe between the birdies, close to the middle of the grate.
