So i had the wifes family over for mothers day and decided to make some pulled pork. Probably the easiest smoke ive had to date. Put the shoulders on around 1130 the night before, set the vents around midnight, woke up at 8am, refilled the water pan, tossed in about a half a chimney's worth of coals and internal temps came up 180 around noon the next day. Everyone really seemed to like it.

Steven, looks good. Question: did you notice a difference in tenderness b/w the two? I think many of us get these two packs and rarely are they similar. I see from the bottom pic that one was bigger, but seemed to have more marbling while the other was smaller but leaner. Did you trim beforehand? Just curious. Thanks.

I like the the bark on the pork. Nice job. Your smoke process is similar to the way I do it. WSM holds temps very steady. I pull my pork when it hits 200-205
