Rereading your "Let's Cook" treatise on "Perfect Chicken Skin", I noticed something that had slid by me the previous times I had read it.

In the Brining section, you mention substituting 3/4 cup Morton Kosher Salt for 1 cup Diamond Crystal Kosher Salt. Is there a difference between Kosher Salt and Kosher Salt? /infopop/emoticons/icon_confused.gif /infopop/emoticons/icon_biggrin.gif Is it the size of granules, or what?

I remember reading some other thread where it mentioned the size difference in salt crystal between the two brands. However I have a box of both Diamond and Morton in the kitchen, and after pouring some of each box out, I really couldn't see much difference.
