Monday night spares


 
Spares cooked at 260 with oak and pecan using 3 2 1 method with the last hour being with the vents completely closed

rubbed with homemade rub and served dry. Also had some mashed reds and some roasted veggies.

Nice ribs. Wish I could do a cook like that on a Monday that isn't a holiday! Great colour on those huge ribs
