So , I've been hankering to try a roast on the WSM and today worked into my schedule.I defrosted a half of a top round that we got a real good deal on. (Cut in half and frozen)
So anyway... nothing too fancy...slathered it with Italian dressing marinade and dusted it good with A-1 rub.
gave it a quick all around sear in a hot frying pan and tossed it into an aluminum foil loaf pan. (Just to cut down the drips into my dry water pan.)
The smoker is chugging along at 300 degrees just as nice as you please.....and after a while I added my first attempt at a Hasselback potato. This is how it looked after about an hour in the smoker.(not the potato , I just added that when I took the pic)
I'm shooting for an IT of 130 for this roast. Then I'll take it out and rest it til we're ready to eat. I'll update with a pic of the finished product in a while.. I can tell you , it smells good!
