Monday Night Football cook and Bacon!

Late post but I have been busy.

called out of work Monday so I could hang out and bbq for the Chargers game against the Colts. I bought about half a pig from a local pig farmer last month, Cook Pigs Ranch, awesome name and they raise some quality pigs, heritage bred, no hormones or antibiotics, get a lot of there feed from local farmers, yada yada yada.

Started with some spare ribs.

Got the WSM 18.5 ready for the ribs and found this brown widow, they love to hang out on my bbqs.

seasoned them with a basic rub since my son doesn't like spicy yet....On the grill with applewood.

On to the bacon...... Cook Pigs Pork belly being divided by my dad.

seasoned the two pieces diffierently. One with just cure, salt, and maple syrup. The other with cure, salt, turbinado sugar, crushed garlic, pepper, bay leaf, toasted fennel. Let them cure for 7 days (don't have any pics of this process) and then washed and on the smoker with apple wood.

smoked for two hours and then pulled. Put them in the fridge overnight so that the flavor could mellow out. Par froze them and then sliced with a chefs mate meat slicer, love this thing. and here is some of the bacon packed and ready!

Both came out pretty tasty. I like the one with the fennel and all the other stuff the most. Pretty pleased with the outcome for my first time and I look forward to many more cured pork bellies in the future!

Thanks Bill! When you get the opportunity definitely give the bacon a go. Not to hard to do and very much worth the wait.
 
Awesome pics and cook Nick!!! Was an awesome game too! When you say you bought half a pig was it processed at all or was it half a pig and you had to cut it up yourself?
 
John- i bought it butchered already. One day I will buy a half and butcher it myself. They sell the pigs however you want them. I am planning a whole hog roast near thanksgiving and will purchase a whole hog from them for that.

How big a hog and what are you gonna cook it on?
 
John- thinking a 50-60lb hog and am going to build a cinder block pit and cook it on that. Been doing a lot of research on it and I think I have most of it covered.
 
I wish it was you and not your fiancee that was wearing that crazy turban so I could crack on you, and not her, Nick! ;) What I can't crack on is the great lookin' ribs and bacon you've cooked up, nice work.
