Momofuku Pork Chops

Last fall, I was in Ithaca, NY and stopped in at The Piggery, which is a farm to table butcher and deli, and grabbed some nice, little chops.

These chops started with a dry brine of equal parts salt and sugar (I consider this SOP for Momofuku) and after some tempering, I grilled them.

Salad: cherry tomatoes, tofu, basil, and sherry/sesame vinaigrette

Pork Chop with mustard seed sauce, ginger scallion noodles, and rice cakes with dragon sauce

The rice cakes were new for us, pretty awesome, and another fine example of why I'm in love with this cookbook.

I always shoot aperture priority, and decrease my iso until I have a reasonable shutter speed for a hand held shot (1/100 or faster). But with my kit lens and IS, I can shoot a bit slower and still get a decent shot. This pic was iso 800, 5.6, and 1/60s.

auto focus is the best.

photography has a lot to do with the size of your lens, and not length, but diameter. The bigger the piece of glass, the more you can do with it. Unfortunately, bigger glass means bigger bucks.
