Moldy Smoker

I know this has been covered but my question is a little different. I have been away for a couple months. I have to cook a small pork shoulder for this evening, I opened up the smoker and a fair bit of mold. I have wipped it out and fired it up for half an hour to burn the rest off. Do you all think it's ok to throw the shoulder on now? I have to head out to work soon. Thanks for any help

its a close call? ive had that happen before and same thing i wipe it out as best possible and then run it really hot for a while to try and kill anything in there! how hot did you get it and for how long?

Not hot enough! I've only been running at about 250 for half an hour.

SO here's the next dumb question, what happens if I do throw it in.....
 
If it was me, I'd load her up with lit lump, crack the bottom door open and crack the lid, IMO that should get you to the temps you need to be at. My .02

Yes. I fight mold all the time. The conditions I live in mean mold is to be expected. I just give it a good rinse, a good wipe, and start the cook. The heat snd smoke deal with anything stray remaining so I don't delay the cook.
 
No propane weed torch here unfortunately. I through it on after about 45 of a lower burn and having wiped it all out. The cooker is running a little hotter than I like (about 300 lid) but that should be down soon and hopefuly we'll have a good shoulder by tonight!

With a 1/2 ring of lump and the door cracked and the top askew, I have no problem getting mine up to 450+ vent temp - even when it is 20 degrees outside....so just crank it up. I do doubt though that anything will survive 250 for even a short period of time - but I am not a microbiologist...I'm a physiologist
