Missouri > Jackson: Wibs BBQ

Lynn's thread about taking a BBQ Tour in KC or TX inspired me to talk about Wibs BBQ. This joint's been around since 1947 and I got a chance to stop there for lunch today and take my bride of almost 20 years there for her first time. My mom ate there when she was a kid and took me there when I was young too. Mom and I were there together a few years ago and she confirmed that nothing has changed. Check out the pics below and stop by to give these unique little bbq sandwiches a try if you're ever near by or passing thru. It's only 7 miles off of I-55

Here's what it looks like out front - I dig the old Coca Cola signs

I placed my order and made a friend in the waiting area.... :giggle:

ME AND MY PIG (2).jpg

I ordered two sandwiches, the original, and the mince. The original is my favorite, they slice smokey, tender pork shoulder, apply sauce and then toast the sandwich. This sandwich is so popular around jackson that when I was a teenager, there were a few other restaurants within 30 miles that started making their own version. Some internet reviews on this sandwich are not so good.... it's because people want more meat. I get it, but this is a throwback sandwich, made before "big food" was cool. It's sort of like the original single patty cheeseburger from McDonalds which most people won't order anymore, but lots of people still love Wibs' original.

Here it is - the pic's a little out of focus but if you squint you can see the thin sliced pork on the sandwich and the bbq sauce on the bottom. The BBQ sauce is a little spicey, and probably has some tabasco in it. Yum! If you're hungry, get two of these bad boys. They have a version of this sandwich with pimento cheese that I'll try next time I get a chance.

I think they only have about 10 or 12 four top tables inside. Lots of folks carry out and eat in their cars or outside on picnic tables. Here's some of the rustic outdoor dining tables. Wifey and I decided to eat in the car since it was just a bit chilly out.

Let me know if you've ever been to Wib's or have ever seen BBQ sandwiches like this!

It's been many years since dining there. I only remember the mince sandwiches, and they're very good.
Looks like you're originally a SEMO guy. We lived in Dexter, MO until I was 14 when we moved to StL.

Bob, I grew up about a 30 minute drive from Wibs. I'm pretty sure I played baseball and basketball in Dexter a few times. I think I ate at the Hickory Log at least once! Of course it's been so long ago I don't remember much so I googled..... white table cloths?? I bet their Q is good but if I ever get the chance to try it again I'll have to get it to go ;)

Have you tried Smokey Mo's? I had lunch there a couple of times, both times pretty dang good. And no white table cloths :ROFLMAO:

But also bottles of food service ketchup, to appeal to the Common Man.;)

Never much cared for Hickory Log, Dexter Queen was our go to for que.
I like Smokee Mo's for their Mangia Bene sandwich, wife didn't care for their pulled pork or sides. I think there was green pepper in the baked beans, that's a no go for her.
I currently have a pork butt smoking, nothing else compares, lol.

Home made Q beats restaurant Q 8 days a week! My wife also has an aversion to green peppers. The only dish she'll eat with green peppers in the recipe is gumbo. In gumbo, they're cooked down so much they sort of melt into everything else so you can't even recognize them.
