We celebrated WSM Smoke Day in conjunction with Memorial Day.
Seven racks of baby backs
Applying a little magic dust about 8 AM.
We let these sit for a little while
Going on the WSM 22.5 at 11 AM. Smoker was preheated to 225. Used hickory and cherry.
Top Deck
A little vinegar based mopping sauce
Three hours
Mopped with a little spicy vinegar sauce and wrapped in foil with a little apple juice
Back on the smoker for stage 2
Something for the vegans (not really - I don't allow any of those on the property.)
Starting a little bacon candy on the grill
Bacon - almost ready!
Finishing stage 3
Bacon Candy!
A pile of meat!
Time to eat!
