MERRY CHRISTMAS - Happy Roast Chicken

So this is your year to make Holiday dinner.
But you're feeling doubts that it'll be a winner.
But wait! It's far from time to despair.
You've got more to help you than hope and a prayer.
We've got simple pork loin and fool-proof rib roast.
And a chicken so happy you'll be given a toast.
So choose one of these roasts to make dinner a cinch.
We promise you'll impress any Old Grinch.

Happy Roast Chicken

1/2 cup dry white wine
1 lemon, cut in half
6 large cloves garlic
1 (4-to 4 1/2 lb) whole chicken
2 tsp. cold butter, cut up
3 TB. Dijon mustard
1/4 tsp. salt
1/4 tsp. black pepper
Fresh sage leaves, for garnish

1. Preheat oven to 424F. Pour wine into a 10" cast-iron skillet and set aside.
2. Insert lemon halves and garlic into chicken cavity; tie legs together with kitchen string. Slide butter under skin of breasts. Brush chicken all over with mustard, then sprinkle with salt and pepper. Transfer to prepared skillet
3. Roast 15 minutes, then reduce heat to 350F and continue roasting until an instant-read thermometer inserted into thickest part of the thigh registers 170F,
1 1/4 to 1 1/2 hours. Remove from oven, cover with a doubled sheet of foil and let rest for 15 minutes. Garnish with sage leaves.
