Mediterranean chicken kabobs


 
After the game…
”Whatcha got on the chicken?”
I'm about ready for some bird on a stick!
Cut up 6 breasts, EVOO, salt, pepper, juice of 2 limes, a lot of fresh minced garlic (ran through mini food processor), generous amount of Aleppo pepper, small dash cumin and very small dash oregano.

Cooked on sticks above the coals and rotated every minute or so. Pulled at 155° And placed in warm oven as the veggies finished up.

Served with some rice, grilled Roma toms, red bell peppers, red onions and mushrooms.

And a side of fresh homemade hummus.
 
Some dairy free coconut vanilla ice cream with Ghirardelli 70% chocolate chunks.
