Meatloaf and plank taters

Finally got a brief window of the right weather to get me in the mood for the first truly outdoor cook of the season. A couple of meatloaf pics on here lately and the cedar planked mashed potatoes idea were at the top of my list.
2 lbs of ground beef, 1 lb pork sausage, and 1 lb turkey out of the freezer plus an onion and some peppers, nothing much else for flavor but a shot of S&P.

Oh, I guess I did use my PVC plunger to stuff it with mozzarella and spinach.

Potatoes mashed up with a load of cream, butter, cheddar cheese, garlic, and chives and pasted on cedar plank.

And operating on the theory that the only thing better than meatloaf is leftover meatloaf, I had it again the next night, and invited Tom Collins over for dinner. He had been hibernating overwinter, I think. The cedar planked taters are easy and fantastic, you gotta try them. The flavor is not intense, but it comes through very nicely.

Thanks, guess I've just been training! The cooking and the photo hobby are always a work in progress, but given how much I've learned from this site it sure makes me feel good to be able to contribute something back.
 
Never even heard of let alone seen taters done like that........fantastic! gotta try that.......if you don't mind of course!

They are super easy. Not much different than twice baked potatoes I guess, but simpler to do in quantity. Just boil, mash, add whatever butter/cheese/herbs/cream you want, chill for a few hours to make it set up enough that you can form it into a loaf, and you are in business.
