First big college football weekend, so I was looking for a low maintenance cook. So here's what we did -
Meatloaf, 80/20 ground beef, added chopped onion, KS&P, granulated garlic, McCormick's "just a pinch" cajun seasoning, Mac's Red BBQ Sauce, bread crumbs, eggs...bacon laid on top and more cajun seasoning sprinkled across. The tomato sauce goes on towards the end of the cook.


CSRs dusted with KS&P, Cumin, and Adobo. These guys are going on the gasser - threat of rain and limited cover today.


But keeping it low for 2 hours...

Loaf on the OTS - setup baskets to the side, using leftover lump, two chunks of hickory and topped with lit kbb. Shooting for 350-400 for 60 minutes.

While cooking, the boys washed the old ride...'96 model with 160k. I use this beauty to get back and forth from work every day.

Both are nearly done


No plated pics folks...sorry about that. CSR's were great. I foiled one with bbq sauce and left the others as is - they all turned out really well. Meatloaf was good - not great. Bacon took on too much hickory and the loaf itself was a little bland. I've been experimenting with a family recipe just trying to spice it up a bit. The McCormick's "just a pinch" cajun should be called "just a cup", because I used way more than a pinch and got nothing. No heat, no spice, no cajun flavor. 2nd time I've used and not crazy about this one. All part of the learning curve!
