This should be good. I'm pretty much set in my ways to use butcher paper, fat cap up or down depends upon the smoker, and not really a believer in beef tallow. But Matt Pittman has some good help here. " Jirby " worked for Franklin Barbecue for three years. Zavalas is a popular joint in DFW. There should be a lot of good details in this .

That's pretty interesting stuff. Great video. Adds yet another twist to all the brisket info that seems to be out there on Youtube lately.
