Meat Candy?

Hello my crazy smoking Q'n friends. It's been awhile since I've posted anything. I have been lurking and drooling :) We put the brakes in moving and I just finished up my last weekend of school last week. I have a couple of cooks on the camera that I will post up later this evening, crazy running gas slowed down, I need it. Plus, I'm trying to shed a few #'s. I'll probably find them out there with the lawnmower later :)

Ok, my question. I saw Mr Coffman making something called meat candy, me like meat, me like candy. Not sure what this is or how to make it, any help? And Mike, if you're reading this, those ribs you did this weekend were OUTSTANDING! And if I were there, I'd be standing with them and they'd slowly disappear, 1 by 1. Great color and you cooker looks like you've got a handle on it. Nice! Thanks all, see you all soon!

I make pig candy just like in the link that Len posted, but not always on a grill or WSM, more often in the oven.

The chef at my club makes his bacon in a similar way but he uses maple syrup over the bacon instead of the brown sugar recipe. I tried it and it is great. You may want to experiment with it also.
