At my church we set up "Meal Trains" when women have a baby, someone falls ill, or a family just needs a helping hand. An organizer sets up someone to take the family a big meal every few days so they don't have to worry about 1 thing during a hectic time. This is my wife's passion, and she has frozen lasagnas ect. waiting at any time someone needs a hand. This time....she asked me to do the meal for our friends that just had #3 under 3 years old.
I cooked something up and leaned it towards a Puerto Rican spice profile for my friend's roots. Here it is. I didn't get to plate it, and I don't know how it tasted.
Made a paste rather than rub. EVOO, sea salt, pepper, little cumin and dark chili powder, 6 pieces of garlic, red onion and onion powder. My big helper man, excited to make a meal for "aunt molly".
Chicken rubbed down, and did a bloomin onion with a new trick. Slipped slits of butter in each cut, and let it melt down/cook evenly. Did it 3/4 on skillet, and then transferred to foil to let it steam and softenup.
Final product looked great, and smelled great. And hopefully that plus baked potatoes, watermellon and canteloupe satisfied the family.
