Mayo to prevent sticking


 
Well...... mayo *IS* about 80%ish oil. The rest is eggs (maybe just the yolks,) a little acid like citrus juice or vinegar, and a bit of seasoning. If you use a very neutral mayonnaise, you're coating the food in a fair amount of oil, and the egg will assist in browning a little. Guess this all stands to reason, but I'm still not coating my grilled cheese sandwiches in mayonnaise either.
