Masterbuilt Pro Dual Fuel temp. prob. solved ... but creates a new problem.

I figured out how to get a low temp. on the*this Masterbuilt Pro Dual Fuel. Instead of using the lowest setting, I ran the knob past the high setting almost all the way off and got a 210 deg. reading and it was steady for over an hour.

But here's the new problem. The wood chunks won't smoke at 210.

At what temp. do wood chips start to smoke?

What is the solution? Get the temp. Up to where the wood begins to smoke and the lower it to 200 - 210?
