Marinated Pork Rib Chops

Moving forward with our freezer purge, I discovered 4 remaining pork rib chops that I'd frozen from a great sale at Safeway earlier this year. Sided them up with good old mashed potatoes and some grilled broccoli.

It was a beautiful day yesterday so I boiled the reds on one of the grills earlier in the day. Drained and added some heavy cream (all out of buttermilk) and some butter and mashed. Put in fridge until dinner time.

Heated on grill for about half hour.

Marinated the chops for six hours in soy sauce, brown sugar, Worcestershire, Dijon and pepper.

Seasoned with oil, salt and pepper and paprika.

Minute and a half a side.

Finished off on cool side.

Grilled some Broccoli florets after adding some oil, salt and pepper and garlic pepper. Added some red pepper flakes when broccoli was done on the grill.

The chops were wonderful. Tons of flavor and very tender and moist. Fun cook all the way around. Thanks for looking everyone!
 
Everything on that plate looks great, Cliff, especially the chop! Love the sear marks you get with the grate topper, and I'll keep that marinade handy for my next batch of chops!
