One of the nice things about owning a BBQ food truck is being able to try new items out at home before I put them on the truck. I'm doing a sporting event in a few weeks , the Alberta Summer Games, and figured I'd try a salad idea I have been thinking of for a bit. I have Bacon Wrapped scallops here but they wont be part of the final meal
I brined the shrimp for about an hour and smoked them over pecan for about 20 mins then put them on bamboo skewers,

Then took some of my home made maple chipotle BBQ sauce and thinned it with extra maple syrup then brushed it on,

A quick hit on the grill,


And plated over a bead of Arugula, Baby Spinach, Tomato and onion salad. The salad is tossed in a nice home dressing that is kinda sweet but has a nice vinegar bite to cut through the heat. Then a nice drizzle of the maple Chipotle BBQ sauce on top!
