A buddy of mine is quite the outdoorsman and has been foraging mushrooms lately, I was the lucky recipient of this today:
Such an example I’ve never seen before, it weighed in at over 10 pounds, the two of us could never eat that much before it would have gone bad but, I have a nice big colander full which I will sauté to have with dinner tonight! I might turn the rest into a sort of duxelles to pipe into gougere at a later date, still unsure. Might just shovel the whole batch into my face!
It’s really nice to have good friends who share this sort of thing!
