Lunch meat


 
Looks great, Mark! That's how I do it, too.....large volume, slice it all up, package and freeze what I'm not using right away.

I'm about out of my stash, so will have to get some more going soon! :)

It was fun to do. Did all 3 at once in the E6 Using BnB charcoal and Cherry wood chunks. Nailed the smoke level.
Chilled overnight in the fridge. Sliced using Chefs Choice slicer.
Making sandwich bread as we speak - Vermont oatmeal!
