My kids are on Spring Break and nursing a back injury. Time for me to step up and cook on a week night and with the lunar eclipse looming, I thought grilling would be a nice break from a long day on the grind.
I had book marked Tony R.'s carne asada marinade and gave it a spin tonight. Used all the ingredients listed, except Chef Merito - not a big fan. Oh and instead of Corona, I used Negra Modelo.
Here is what the carne looked while I heated the kettle with some Stubbs.
Cooked the minute about four minutes per side on some high heat coals...
Served with home made refried beans, rice, avocado, and some grilled onions. Got to work on my photography and plating skills...
Tried to keep the kids busy while my wife rested and did some smores over the coals.
