I'm having a luau party for friends and family this coming Sunday and am looking for ideas on what to cook. It looks like it will be about 60 adults and 20 children. People will be bringing in some items so desserts, salads and a for the most part sides are covered. I'm still waiting to hear back from a few people who offered to bring items as to what that will be.
Timewise for prep I'm working Sat. all day and get home just before 8pm but will have off Thursday and Friday.
I'm thinking for appetizers I will make the cold soups from K Kruger in the elmo thread in addition to chips and dips. Any other ideas? I'm also thinking baked beans for a side would be good not sure what else though. For the main course I'm making PP ahead starting it thursday and using a foodsaver to make reheating easy. I'm thinking 4 boston butt's from BJ's should be enough. I'm not sure what else to make that's easy so I'm not stuck cooking all day. I did have a relative offer some frozen burgers/hotdogs and buns from a recent party if I want them. I suppose that would be ok for the kids but not sure.
Any help would be greatly appreciated!
I have an WSM 18 and a Spirit E320 to cook if that helps at all.
