Luau party menu

I'm having a luau party for friends and family this coming Sunday and am looking for ideas on what to cook. It looks like it will be about 60 adults and 20 children. People will be bringing in some items so desserts, salads and a for the most part sides are covered. I'm still waiting to hear back from a few people who offered to bring items as to what that will be.

Timewise for prep I'm working Sat. all day and get home just before 8pm but will have off Thursday and Friday.

I'm thinking for appetizers I will make the cold soups from K Kruger in the elmo thread in addition to chips and dips. Any other ideas? I'm also thinking baked beans for a side would be good not sure what else though. For the main course I'm making PP ahead starting it thursday and using a foodsaver to make reheating easy. I'm thinking 4 boston butt's from BJ's should be enough. I'm not sure what else to make that's easy so I'm not stuck cooking all day. I did have a relative offer some frozen burgers/hotdogs and buns from a recent party if I want them. I suppose that would be ok for the kids but not sure.

Any help would be greatly appreciated!

I have an WSM 18 and a Spirit E320 to cook if that helps at all.

Can't have a luau without some poi. If you don't mind grilling that day, you could make huli-huli chicken.

How are you going to do your PP?
 
kalua pork, poi, lomi lomi salmon, spam musubi,
teriaki sticks, some sort of noodle dish such as chicken long rice. many also make pansit. pineapple is not a hawaiian food item but you could use that if folks like it. its good grilled.
 
Smoke some SPAM, trust me its good. Teriyaki short ribs, kind of on the spendy side but easy to prep ahead and real fast to grill up. Macaroini salad is a must have, I don't think I have ever had a Hawaiian plate that didn't have macaroni salad on it.
 
Thanks for all the ideas. For the pulled pork I was planning on just rubbing with texas bbq rub and smoking it but I'm open to suggestions.

The SPAM does scare me a bit, however I've never had it so who am I to judge? The lomi lomi sounds good as well. Could it be made with cooked salmon instead? I didn't think about macaroni salad, good idea and I'll add that to what I'm cooking as well as a noodle dish. I definitely like the teriyaki sticks. I'm thinking chicken because it's cheaper. Can that be done ahead and reheated or would it be too dry?

I'm trying to keep cooking during the party to a minimum so I can enjoy it. The last time I had a party this big I ended up spending most of it at the grill cooking chicken or preparing the sides. I'm hoping to avoid that for this one.
 
man, can't believe i forgot the mac salad. i need to be whipped with a wet noodle. yes, the chicken sticks can be done earlier and then just warmed up in the oven. although not the same, i see no reason that you can't use cooked/smoked salmon in the lomi lomi. its not a luau with out spam so start practicing !
 
Aloha Kevin... Looks like you got the menu! For the PP, I would just season with sea salt only... then after pulling, lightly sprinkle more sea salt for a more traditional flavor. You can use canned salmon for the lomi but as George mentioned it isn't the same. I think smoked salmon would taste better and since you are making PP throw in a slab of salmon cooked medium rare.
