Low and Slow on the Genesis?

I cant afford both a Genesis and a WSM right now. I think the Genesis will be a better choice for me right now. But im curious whether people get good results trying to smoke brisket or pork butt on the Genesis?
 
Are you buying new? or looking at used / refurbished.

I'm not sure a newer genesis with NS burners will run cool enough even with only one burner running. Even with smoke tubes I think it will be a stretch for a low and slow to cook brisket or pork butt, but maybe its possible.

I can get my 2000 silver B cool enough but it doesn't smoke well. My NS E 330 runs hot so I can't compare with it, but a friend has a similar NS E-310 and hers runs fairly hot too.

If you are looking at new, for the price of a new Genesis II you can get a WSM and a used Genesis, or a new master touch kettle.

What else do you like to cook? What's your overall budget for "right now" ?

I have done pork shoulder low and slow on a gas grill. So it is possible. Is it as good as a wsm smoker... no idea.
Brisket could be harder cause of space.
Many use a gas grill as their daily driver. So it is understandable to get that first.
Course, people on this site may be more enthusiast so...The performer is usually the "if you can only have one" choice.
Not recomended for now. See if a used grill is an option. Right time of year too.

I believe you can do most anything with a gas grill, but the results will not be as good as a charcoal/wood rig. My experience has been wood/charcoal gives much "moister" results and better smoke flavor. For me gas cooking dries things out quicker and easier and you really have to watch what you are doing. If you are a bit short on $ I would recommend snagging a bottom end 22" Weber kettle and give it a whirl. They can easily be had for less than $150-200 and can do most anything a higher end smoker can do. Great for high heat cooking too. I have a Genesis, 22" kettle, and a large Big Green Egg. All of them can give great results, it boils down to effort you put in on your part.
 
You can. Managing wood chips seems impossible for me. They either won't smolder at all or burst into flames. Also, the Genesis vents out of the back and it's hard to get to get as substantial amount of smoke and bark. It can be done though. I remember seeing an Amazing Ribs article on it. He uses a lot of water pans if I remember right.
 
I thought about a Performer. I prefer charcoal, and it was fine when I had a place in the country. But, now that I’m in the burbs, I dont know if I want to deal with the ashes.

I just started using a performer deluxe after 20+ years of propane on a Genesis. Get yourself a steel ash can from Walmart, so you can immediately empty out the kettle when your done without having to wait for the coals to burn out. Between that and the gas assist on the deluxe, charcoal grilling is much easier.
 
There are plenty of used WSMs out there at very cheap prices - about $100 as people are dumping them for pellet poopers. I got my first one for $20, flipped it for $150 and bought the one I have now for $90.
 
You can do low/slow on a Genesis (see link below) and get meh results. But it is a pain -- water pans, foil pouches, smoker boxes, pellet tubes, etc. As Dustin points out, getting the smoke right is tricky. Has to be hot enough to smolder, but not so hot that the wood bursts into flame.

Not a big deal to do that for the few hours needed for hot/fast ribs. But do you really want to fuss with all that for a brisket or pork shoulder cook (8-14 hours)? No thanks.

Which is why I finally added a WSM 18 -- $80 bucks off Craigslist. Or get a kettle ($0-50 used) and rig it for low/slow. I still use the gasser constantly as my daily driver. The WSM is used once every three weekends or so.

WSM 22 near you in Nyack, NY for $150.

With a 22 (same diameter as a regular kettle), it is also a service-able charcoal grill in addition to smoking.

Haggle him down to $100 and you're done.

I'll waive my commission on the deal. : )
