Love wings on the WSM

I have made wings in the fryer, in the oven, on the kettle, but I think on the WSM is the best. Almost makes the WSM worth it just for wings. (did i just say that)

My favorite way is to season them up with my chile wing rub and let them get HAPPY!

High heat and they are done in 1 hours. Flip after 30 min

If you haven't made them yet on the WSM, I highly recommend it!
 
Between this and the Tapatio wing recipe, I think I'm gonna have to make some wings soon. I love them.

My favorite dipping sauce is Sriracha, melted butter, cilantro, and lime juice.
 
For wings, around 300 on the hood ornement thermometer. Not really true high heat, but it would be a waste charcoal to try to get higher. I light a fully chimney and dump onto another 1/2 chimney of unlit. When I have lump, I will do the same with that. Gets me higher heat and a don't have so much left over.

I do reuse coals, but you can only have so much left over on hand!
