Just ran across them recently and saw how good the butt looked.
I scored the fat cap like you would do on a ham. It seems to give the rub more places to hide and makes it a little more crispy. I don't like that big slab of squishy fat on top. it never seems to break down enough unless I score it.
I use photobucket as a host for the pics. there are a lot of tutorials out there to learn from.
Can't wait for the damn snow to melt, just got another 7" sunday.
