Loading Smoke Wood into WSM


 
Sucess. I buried two chunks and put a third fist size chunk on top of the minion coals.
I did two turkey breasts and two racks of untrimmed spares. I had a nice wisp of smoke most of the cook. All turned out great despite making a huge mistake--when I began the cook with all bottom vents 100% open, I mistakenly left one closed. I fought to keep the temps up for hours--crackign the door, the lid etc. I felt like a fool when I went to close down the cooker and noticed one vent was closed. But all tasted good.
 
Good deal, Chris. For some reason, I don't like it when my smoke peters out, but I keep learning that it's just flavor, and you only need so much. It's still hard to keep from sticking another chunk in, though.

Of course the more smoke I use the more neighbors seem to "just stop by to say hi" in the evening. LOL
