Didn't have any plans for dinner tonight so we thawed some thinly sliced chicken breasts, and used some left overs to make a pretty decent meal.
Limes and Cilantro from quesadillas a bit ago made the "marinade"/seviche. Totally random but worth a try. Even just 30 minutes overpowered the meat a bit.
White rice left from chicken stirfry and black beans from the quesadillas. =Lime and cilantro black bean rice (sounds fancier that way, right?)
Smoked chicken for a bit with some apple and cherry. Wish I had filled a full basket and gotten it hotter to crisp the ends a bit more. Live and learn.
Put it all together over a bed of lettuce and topped with diced tomatoes from a friend's garden.
