As far as oil storage/longevity They used to sell only peanut oil which I could get 2-3 uses before it went funky but then they started using blends which cost more but didn't last as long.
I kept mine in the garage in the original jug after filtering and straining.
 
These are very cool. The idea of frying a turkey terrifies me, but the results look incredible
3 and a half minutes a pound, you could do 4 minutes and be ok.
Enough oil to just cover the bird, roughly 4 gallons, maybe 5.
350 degrees on the oil, nothing to worry about 😁
EDIT=we maintain 400 on the oil.
