I had an extra turkey in the freezer at Christmas and decided I was going to do one pretty much exclusively to have leftovers.
Put most of the breast meat through the slicer to make lunchmeat sammich baggies.
Boiled down this stuff to make stock.
Rest of the meat pulled.
Awhile back, I had Food Network on in the background one day and Giada had a show where she made sheperd's pie with her leftover Thanksgiving turkey. Had an uncle who married a British girl when he was in the Air Force and stationed at RAF Lakenheath, so I've had some exposure to authentic sheperd's pie and this isn't it- but I was intrigued by the idea. Turkey, carrrots, shallots, celery, and peas cooking down in some of the stock from above and a bit of cream and butter. This is the sort of thing that TVWBB needs a scratch & sniff function for.
Ingredients dumped into the pie crust and covered with a layer of mashed taters and shredded cheddar.
Oh yeah, saved some pan drippings from the smoker and made gravy with that.
Plated up.
Since I had a partial container of cream already, put the stand mixer to work on it.
To top off another piece of pie made from some of the squash from our garden that needed to be used up yet.
All in all it was great, but I'm a little disappointed with myself for not doing scratch-made butter or lard crust. Could have done some of that a day or two ahead of time and had it sitting in the fridge ready instead of cheating with supermarket crust-would have been just that much tastier.
