Ok...I read the story of the left-hand brisket and believe it is worth a try. Can't hurt right? Anyway, I am confused at how to determine if a brisket is from the left or right. The story does not specify which direction you are placing the brisket in relation to yourself. the point turing right is relative to which way it is laying...make sense? Anyone know more about this?

Before they are slaughtered, hand them a bat and watch them take their stance. That way you will know which side to cook. Avoid the switch hitters.

An ole Texas pitmaster told me "Them left-handed briskets is mo bettah than they right-handed cousins"
