You brought a smile to my face Tony! Great thread! Growing up in So Cal I have always seen lengua in our taco shops but never ordered it. The big tongue scares but you make the finished plate look tasty! Hats off to you on this unique cook. Menudo next?
 
Mr. Lampe speaks the truth. I was blown away the first time I ever tried tacos de lengua -- very intense beefy flavor. Now add in the flavor of wood smoke, and it must be ridiculously good. Once again, Team Tony & Maribel have raised the bar.

Menudo we have done it once... Still need tweak a little to make it good. Soon I can share the recipe. As long as I don't tell the guys what's it made of .....lol
 
I don't know if I'd cook it but I would be eating it that is fer sure!!

I guess I'm just a muscle/tissue eater not a organ/innards eater. Tongue, brains, testicles, eyes, liver, intestines, etc. are not for me. I'm not saying they don't taste good but if that is all that is being served I will just have to have Jack in the box tacos for dinner.
