Lazy man's Chicken Thighs


 
It looks to be in the middle to me. While we're talking about grate positions though, you know what I prefer for chicken or ribs if layed flat on the bottom grate and only using two levels? I use my spare grate, positioned on the grill strap bolts, which raises the bottom cooking level up a bit. It just seems to make the grates cook more evenly in relation to each other, and gets a little more heat and smoke to the middle of the bottom cooking level.
 
Some of the best chicken I ever cooked was done low and slow on the WSM. I just put them (thighs) on the bottom rack under whatever I was cooking (ribs I think) and let 'em go. They were awesome. Yours look so good that I have a package of thighs thawing in the kitchen right now! Will probably do them low and slow on the OTG today with some apple or cherry wood. Thanks for sharing.
