I say lazy because I was going to cook these over charcoal and for a few reasons I got lazy and hauled out the gasser. And it's not a weber gasser either.(GASP!)
Ok , with those sordid details out of the way here's how it went. ....
These were a BOGO so the price was actually half of that. Not too shabby.
A friend sent me this brisket rub from HEB in Texas so I figured it'd be good on beef. (It was) but I had no idea how HOT it was ! Whoooeeee!
Good thing I cooked a few pieces plain , cuz sweetie would not have enjoyed these. Lotta cayenne in there , Podnah!
Hotted up the grill and chucked on the chuck......
Grilled them them to about 135 and then put them in a foil pan along with some of this stuff. (You know you're old when you have one of those 7 day plastic thingies for your "meds")
Covered the the pan with foil and simmered them for half an hour....Plated them up (hopefully) a bit more photogenically than usual......
Ok , this was my first attempt at these beef CSR's and overall , I like the cut. They had a nice flavor and they came out fairly tender. Next time I will do them on the WSM ...I used too much of that brisket rub not realizing how much cayenne it had in it , but that's on me.
A word about the Stonewall Kitchens bbq sauce....phenomenal. All their products are amazing. They are in York , Maine and distributed all over New England , but I know a lot of you guys are out west and down south....but if you ever do see any of this stuff or you can order online., I recommend them highly. Top shelf stuff. Ok , on with the weekend. Thanks for looking.
