WonderWife was nice enough to pull out some chops for dinner tonight. I didn't have a lot of time to think it through. By the time I got home I just threw a little lime juice and some Weber Kickin' Chicken spice mix on 'em.
I lit some coals on my grill and seared them on high heat. Then I moved the coals into the WSM and cooked them at 350 for about 45-minutes (to an internal temp of 160).
Getting ready to rest for about 10 min:
Plated with corn, rice and refried beans. The red sauce is some chipotle adobo sauce:
