On Christmas day during a little bit of down time I got lost looking at recipes on New York Times Cooking and one of the recipes I wanted to make with this Tajin Grilled Chicken. I blended the recipe as written, the only thing I did different was removed the seeds and stems from the chipotles. Then marinaded the chicken for a few hours before placed it on the grill, with boring chicken breast for those who don't like the new recipe. Got some burnt edges even on the indirect side.

Getting a little time over the fire to finish.

Done.

Cut.

And served with sugar snap peas that were cooked on the grill (in a CI skillet) while the chicken was resting and oven roasted potatoes.

This recipe was really good! Sweet, then citrus, then heat. Next time I will add double the Tajin and see how that does.
Hope 2022 was a great year in life and in grilling for everyone. Here's to another great year in life and grilling in 2023!
