Labor Day BBQ - Pulled Pork Rub Questions.....

So a few weeks ago I did about 8 butts for a party, came out spectacular - everyone loved it, even better then the whole hog guy they had the year before. I did two different types:

The Renowned Mr. Brown

Chris Lilly's Six-Time World Championship Pork Shoulder Rub & Injection

These are very good, but I do them nearly every single BBQ. For Labor Day, I want to try something new, I checked out the forum for recipes, and nothing really caught my eye.

Could you ol' pro's recommend a real crowd pleaser?

I was also thinking, since most of these folks will like it if I just pull it and mix in my sauce, perhaps I should go light on the rub, so more Pork & Sauce flavor comes through. As I noticed with those 8 butts, with pulling and saucing - to me was to much flavor. Perhaps I was just critiquing a bit much....

This is what I will be using Saturday.

Big Daddy's Song of the South Dry Rub
½ C Paprika
½ C light brown sugar
½ C onion powder
4 T salt
4 t ground nutmeg
4 t ground cinnamon
4 t ground thyme

and this is the serving sauce we will be using;

1 cup ketchup
1 cup water (more or less for consistency)
2 Tablespoons apple cider vinegar
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon crushed red pepper (more or less to taste)
2 teaspoons dry mustard
2 Tablespoons light brown sugar
2 Tablespoons molasses

Simmer for 20 to 30 minutes.
 
Thanks guys - I'm going to give a few of these a shot. Pork butt count went up to 4 for Labor Day in addition to 35 leg quarters of Road Side Chicken...
