Knife sharpener


 
I have 2 different Chef's Choice sharpeners..... as far as I'm concerned, I was left with a duller knife than what I started with. I just cannot stand that tri-beveled edge, it just seems flat to me.

A few years back, a buddy of mine was over, helping me prep food for a back yard party. I apologized for not having my chef's knife properly touched. He put the knife down, looked at me and said "This is DULL?????"

I know a lot of people are fans of the Chef's Choice system. I am not one of them.

That was my experience with my original Chef's Choice. IMO it actually ruined the knives

I have been intrigued for some time that some of us feel we achieve terrific results with the XV (I also have the 120), while others loathe it.

I found a couple on FleaBay look to be in great shape at good price. May just give it a go. Honestly I understand my limitations of certain skills. One HUGE one is I've spent many $$$ on whetstones of various types (natural, diamond, etc) bought the original Chef's Choice at the recommendation of a friend about 30 some years ago, bought Worksharp KO and been left frustrated. I'm open to trying something else :D Trust me bro, you have not "lost" anything LOL
 
In all fairness....... demonstrably, while I may not be the greatest sharpener in the world, I can hold my own. I really do like the edge I can get from a belt sharpener, and I'd love a bench sander like @AndyK suggests. Dad asked me for some help with a 3-4" wide wood chisel where he'd managed to get at least a 1/8" bow in the cutting edge, I managed to bring it back with a diamond plate sharpener. Grinding wheels & I just never seem to be on the same page for sharpening edges.
 
I've tried all sorts of knife sharpeners; Spyderco, manual pull thrus, electrics, whetstones, even the (cheap) Japanese style stones...all ok in the short run, but all requiring re-sharpening too frequently. I got tired of sharpening my knives.

I went down the youtube rabbit hole and found a guy who liked diamond dry/wet sharpening 'stones'

I bought the coarse and the fine. It did take some time to learn the movement of the knife against the stones, but I can get my knives 'scary sharp' and they hold an edge with the use of a nice ceramic hone.

Might I suggest looking at your edges with magnification?

EDIT: Adding another picture. The dull area is in the most often used area of a steak knife (the "belly", or curve) so it's hard to get completely in focus at this level of magnification.

How long have you had it? Edit The MK2 Ken onion was released May 2024
IIRC I bought it prior to that date. I think it was 2023, maybe 22, IDK what the differences are but I'm certainly not gonna buy another one only to be frustrated yet again :D I may just jump on a Chef's Choice XV and see what happens

Not suggesting that. More curios which one you have
 
What about this?
It has the markings mine has from 2019, yet the photos on Amazon are different. I would be left wondering if there could be a possibility of improvements on the newer-built ones, but it could go either way I suppose.

It may depend on whether you would be okay buying it without a return option, or would rather pay another $53 from Amazon and be able to return it. Though I'm not very familiar with Ebay - perhaps they have return options too.
