Kitchen knife replacement thoughts


 
Just a little suggestion...
When buying the knives, include a sharpener.
Noted.

Took some time with the Zwilling page last night.....there is lots to like there.
I will investigate some of the other options listed on this page thanks to everyone for your suggestions......

The other half......has her suggestions...........they are not the same as my suggestions, even down the the block itself.
I am ready to spend a fair chunk of change on this.......she is not....then she says " you are gonna do what you want anyways "
Wish me luck.....not sure what kind of battle I need to get myself into....:unsure::cautious:

No block. Drawer. I ditched the block which is a dust collector and for me, lacked enough storage anyway.

I continued looking at the magnetic type of block....looks like a space saver and would allow me to buy just the knives I was interested in rather than say a set of 11 or whatever.......might be a more costly approach which she doesn't like and she also doean't want the knives visable on the counter........
Should I ask her to do all the cooking then and things can be her way?????
I am bad at decision making..........:sneaky:
 
Zwilling Professional S has been my knives for 32 years now. Replaced a few knives under warranty last year, posted here, without any issues.

I also own a few Wusthoff German knives. Buy quality knives once and you’re set for life.

A whet stone is my sharpener. I use the steel for straightening frequently so the teeth are in alignment.

I’d avoid the cheap ones. They just won’t last the rest of time.
There have been a couple of good threads on knife brands. Most of my personal experience is with Wusthof and I've got a set that's close to 30 years old.

I use my 8 inch chef the most, so much that I bought a second.
Getting some looks in at these Wusthof knives...these are beautiful pieces.
More money than the Zwilling....but I would say you get what you pay for most of the time.

Yea, I agree. My overall collection is ProS Zwilling with some Wusthof that I received as gifts. I like the balance and feel of the ProS. And now that I’ve had them forever, they’re just an extension of my hand when using them. And the lifetime warranty is for real.

With either one you’ll be happy. It’s just about how it feel to you when working the knives.
 
I have been waiting....looking around.....still deciding on what to purchase as I really do have no rush at all.....
Now I was commited to getting a quality German knife.
First pic....popped up for sale. It is not exactly what I was looking for.....good brand, this set however is made in Spain instead of Germany.
People still seem to like them and by no means am I working in a Kitchen for a job....70% off.
Second pic shows them at the manufacturer's website at their current sale price...56% off.
I already have a good set of steak knives so that wasn't on the table at all....trying to avoid them actually.....
I may consider this..........the sale is a few days long yet so I have a bit to go over it more.........
Maybe get this as a set for the Kitchen and I am still amazed by the Wusthof knives......maybe pick up a slick magnetic block and pick 2 or 3 of those up and make them be exactly what I do want.....let the rest of the crowd use the knives from the first pic...........
I like a good deal....I also know not to buy it just because it is on sale........I never needed tha pink cowboy hat I swear.......I will go over it more when I get a few more minutes to really dive into it....
Being the whole made in Spain thing might honestly just be a replacement of my Henckels set......this is not much of an improvemnet maybe...

IMO, only buy their german made lifetime warranty knives. there's a big difference in quality. ALL knives will wear down over time. my perspective was buy it once, and buy it for a lifetime.

you might be better served cruising craigslist or ebay or whatever for resale knives. you can get the Pro S at a good deal for a set. and you will still get the lifetime warranty. just don't let zwilling know you bought them used but rather got them as a gift years ago.

you can't go wrong with either of the two german brands. i own knives from both and am very happy with them. truly, cutting tasks are a breeze and effortless.

My two recent knives are from Victorinox. No Idea if you can get them in the states. I have A slotted Sandoku style knive, which has seen heavy use. Its easier for me to sharpen, because it has a more uniform curvature compared to the traditional chef knives.

This year I got the victorinox Carving knive from a sale. IMO they come with a decent edge from the factory compared to my WMF knives.

Also, every mom here owns at least a dozen of these little knives: Allzweckmesser

They have a "Wellenschliff", similar to a bread knive. You can never sharpen them by hand, but factory new these things are scary sharp.

I probably won't go with this set.....I looked at this idea for a while longer....I will get more time tonight to investigate but I truley beleive that this is no better than whatI already own...just new.
I do want to buy ( cry ) once and be happy for a very long time.
I use knives every day for at least one meal......
My other half is not thinking like me. I do I would say 80% of the meals.........she does help "sous" a lot, we spend our cooking time together processing raw ingredients and preeping ect. She thinks there should be an upper limit to how much I should spend.
I just keep talking, shes eventually gives up and says I am going to do what I want so there is no point intalking about it..hahahaha......
 
I have the Zwilling Pro S carving and chef knives; I purchased them three and a half years ago and really enjoy using them. I even reach for them when, previously, I may have used some other blade. They have a great feel in my left hand and I sharpen them less frequently than others.

I may have even purchased them at someone's recommendation here.

I came home with a boat one day....that was fun.......

Next on my list along with these knives is going to be 1 to 3 of these in different sizes............
What she doesn't know is the handle I assume....is what is going to be a hot item to touch......that will be fun too.
This is the same or very similar material I believe as to what the Slate is made out of.....works very well.
No one makes pans like the French.
Life time warranty.......buy once.............

That actually made me laugh out loud. Really feel like we need to know more about that...
 
I have ambition to replace my kitchen knife block which is a Henckels set.
I thought it was something else when I bought it and found it on sale for what I thought was a very good price.
The 8" does a lot of the work and it still seems to cut okay but some of the knives came dull and useless.......
Since picking up my new set of Zwilling steak knives I posted I have come to the point where I do use these knives daily and would like a good set.

It feels as though the knives from Zwilling are of good quality, I have been researching the different line ups and whatnot.
I understand the buget lines vs better and best, some get made in Germany and Japan which is great and it seems as the more budget tend to be made in Spain.

Interested in your thoughts on this brand and experience if you need to tell a story.
Also any other brands you have personal experience with and why I should own that brand.

Note:

I am after a smaller block than I currrently have to save counter space. I think I currently have somewhere around a 15 piece set including steak knives.
I am after a set that does not include steak knives.....this alone will help save some space.
A magnetic block is a very possible option.
Something around a 7 to 9 piece sounds right in my head including the block, sharpening steel and shears if they happen to be a part of it.
Going to need a chef's knife, the others I use less but a bread knife would be great and, a utility, carving, veggie, santoku all would be nice.
