I Love my WSM, but, sometimes, my little ol' cheap (bought at Wal-mart many years ago) offset smoker works wonders for tri-tip. I used wood chips, every 1/2 hr on the coals, to get this, nice smoke ring. Wood is apple/hickory/peach. Nice, light,but good smokey flavor. Meat was very tender and tasty.
