Nice work Michael...I have a WSM and an Offset as well. I'm curious, how long and at what temp did you cook the Tri Tip...Regards...Stu
 
Thanks for the nice comments. The offset that I bought, came from Wal-mart years ago, was branded New Braunfels. Now, I think they are called Charbroil brand. It was $79.00. It does not retain the heat well. I only use it in the summer time. But it does work good on ribs and tri-tip. I cooked these at around 275F-300F. The big one took 3 1/2 hrs, the smaller one around 2 1/2hrs. I wrapped both tri-tips in foil for the last 1/2 hr of cooking, then rested for another 1/2hr or so. They were tender and tasty.
 
What is tri-tip. Ive never heard of that. I looked for it at sams the other day and didnt find it.
