Kettle fried chicken!

How long do you fry the chicken for? Temp? I've had problems with frying chicken to the perfect golden brown, and then cutting in to find it's not cooked all the way through (or dry). Any insights will help.

Howdy Luke from MD...I start with a hot bed of coals banked and then adjust down as needed...I would guess probably about 5 minutes a side (till it gets crispy...flip and another 5 minutes! Pull and let it go indirect until it gets to 150 155ish or about and then into a warm bowl) works pretty well! I like crispy...hate dry and it's tough to achieve both!
 
OK ...I'm not gonna say "WINNER WINNER CHICKEN DINNER"
