I didn't sear this batch and it was noticeable. I would suggest a slow cook such as you mini, and when they're to temp, pull them out of the mini, take the mini apart, and reverse sear them on the Smokey Joe. The CSR's really come in with a sear, to the point I probably would skip cooking in the BBQ sauce, so that I can do the sear. Use the BBQ sauce as a dip it afterwards (also heated up on the mini for some smoke flavoring)
