Pernil is a Latin Pork Shoulder Roast.I used a Butt instead.
seasoned with olive oil,adobo,sazon',oregano and minced garlic,blk ppr.
Roasted for 5hrs,@350*.Served with rice/beans.
make a paste and rub all over.
when I use a "skin on" shoulder I slice under the skin and make it into a kangaroo pouch,slice down through the roast and spread the paste in between the chops I've created.Then over the outsjde skin.Sprinkle with adobo to make sure your skin crisps up from the salt pulling out all the moisture!........Enjoy
